Geographical area from the Aspres, in the foothills of the Pyrenees. The

Trouillas and Terrats.

• Production : Limited serie – 3 000 bottles (75 cl).

AGEING ❦ WINE MAKING

• Wine making :

Grape from morning hand-picking, must fermentation and pneumatic
pressing. Racking must by flotation and fermentation at low
temperature. “Mutage” (addition of pur alcohol) during fermentation
before setting in barel.

• Aging : Aged in old oak barrels for 8 years and final refining in Tennessee Whiskey casks from the Jack Daniel's distillery. The natural sweet wine is refined in the barrels of whiskey freshly extracted, not rinsed and cleaned.
