TERROIR ❦ VARIETIES

• Terroir :

Geographical area from the Aspres, in the foothills of the Pyrenees. The
terroir of Trouillas is characterized by silt-clay with an extremely stony
top-soil. The vineyard exploited in reasoned agriculture benefits from
good exposure on the slopes of Mas Deu and on the terrasse between
Trouillas and Terrats.

• Varieties : Grenache Blanc (old vines) / Roussanne / Macabeu
• Production : 4 000 bottles (75 cl)

AGEING ❦ WINE MAKING

• Wine making :

Hand-picked in the morning, pneumatic pressing.
Fermentation in new barrels.

• Aging : 6 months on lees in oak and acacia barrels

TASTING

Gold yellow pale colour. Aromas of white peach sustained by fine notes
of vanilla.
Its mouth is round, fresh and highlights by buttered flavors, delicatly
toasted and a subtil mineral note at the end.

WINE AND DISH PAIRING

Ideal pairing with sauce fish or poultries. Perfect mariage with
mushrooms (morels), and to taste with a Comté from Jura cheese
